The Loving Hut

To all the “thinking about being” vegan-ners out there. I realized today one of the most awesome things about begin vegan is all the hole in the wall yummy food places that are out there! Yay! Today’s early dinner at “the Loving Hut”
Food in the picture above is the gluten free Singapore Noodles (curry). It was so great and the vegetables retained moisture while keeping great flavor. No sauce necessary.

This is a nutrition balanced salad that left me satiated with that good kind of full feeling not the sick kind of,I just ate a baby feeling. Lol enjoy!!! Feedback is great too (no but really I love it…)

Kombucha krazy

Okay so I’m into day 2 of a week long juice fast to detox, reboot and refuel my body ( a biological masterpiece that should be treated with care lol) and I want to know more about the fermenting necessary for raw live kombucha juice/tea. Any advice would be greatly appreciated! Wish me luck 😉 ( I’ve had raw kombucha before (synergy) and had an upset bloated tummy feeling for a while so I want to make sure I’m doing this right!)

Back to the Mission

When missing someone, the inside jokes become the silver lining around clouds of fading memories.
I assume that time will fade it all into one big daunting blur.

Maybe not exactly time itself, but more specifically what I do IN it (not with it)

I never thought I would be one to genuinely enjoy the quiet solitude of my mind and recognize the freedom of mental retreat.
In this place is where I know my corpse is merely a vessel.
What a relief.

When our vessels burst and the amorphous contents leaks into infinity…will we still feel those intangible catalytic feelings that inevitably guide our every action?
Will the others still remain in the drowning pool of the ones that were missed?
Can you control the matters of the heart in every realm of existence?
What is grace and can you share it with the ignorant and the wicked? Or is an attempt to do so just energy wasted?

It can’t be…
can it?

All questions that will never be answered until my aura escapes the clockwork of these arteries.

I believe that the escaping aura is a wealth of light.
It was said in truth that Light is Love.
Love is free.

True freedom is in truth.

Blackbean & Tofu Stuffed Mushrooms with Mango Salsa topper

Ingredients:
Quinoa
Black beans (cooked/softened)
Tofu
Sweet peppers
Olive oil
Garlic
Red onion
Mango
Cilantro
Lemon
Tomato

This was super fast and simple.
1. First boil the water for the quinoa (1 cup of quinoa for 1 and 1/4 cup of water) add quinoa to boiling water, cover,reduce heat and simmer for 15 minutes
2. Next hollow out the mushroom caps and rub them inside and out with olive oil then put them in the toaster oven on the grill setting for ten minutes at 300 deg

3. Next chop peppers, onion and garlic to sauté with preferred oil

4. Crumble tofu with hands into a skillet with oil on medium-high heat (season to desire) and add in cooked black beans
5. Once the pepper onion garlic party is done (should be softer and brown on edges) then cook the grilled mushroom in the skillet with oil until they look juicy

Oh yeah, and the quinoa should be done!

6. Make mango salsa with diced mango, red bell pepper, a pinch of salt and cilantro
7. Start with the black bean tofu mixture. Spoon into the caps and smush smash the sautéed peppers n stuff on top of that. Top with mango salsa.
8. Serve with quinoa (I add a dash of cumin to my quinoa)
Enjoy!
This recipe wasn’t really planned, it was more of a food lab surprise but it was yummy! (If you like spice, try adding your favorite hot sauce dropped in the center of the caps)
